Flourless - Gluten Free Brownies Made With Pumpkin (only 4 ingredients)

These flourless brownies are moist, chocolaty, indulgent, but not overly sweet. And they are only 4 ingredients! 5 if you wish to add nuts.

Canned pumpkin puree combined with peanut butter and cocoa surprisingly makes a great brownie batter. Brown sugar is added for some sweetness. These hit the spot when you are craving a freshly baked brownie!

Ingredients:

  • 1 1/2 cups pure pumpkin puree

  • 1/2 cup peanut butter or almond butter

  • 2 TBS brown sugar or coconut sugar (will be less sweet with coconut sugar)

  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup walnuts (optional)

    Instructions:

  • Preheat the oven to 350°F (180°C). Line a 6-inch brownie pan with parchment paper and grease it with butter or cooking oil.

  • In a large mixing bowl, add pumpkin puree, peanut butter, and brown sugar; mix until well combined using a spatula or wooden spoon.

  • Add cocoa powder and stir until your batter is well combined. This should look like brownie batter when you are done.

  • Stir in nuts until if used.

  • Pour the batter into the prepared baking dish and sprinkle extra nuts on top if you like.

  • Bake the brownies for 25-30 minutes in the oven at 350°F (180°C) until a toothpick inserted in the center comes out with only a little crumb on it.

  • Cool down on a cooling rack for 10-20 minutes before serving.

  • Serve with a scoop of your favorite ice cream or soft serve if you want to indulge more! 😋
