Healthy Paleo Chocolate Chunk Cookies – No Processed Sugar, All Delicious!

I love the Paleo diet—it always leaves me feeling my best! When I stick to this whole-food, dairy-free way of eating, my body and gut health thrive. It’s amazing how much better I feel without processed foods weighing me down. These cookies satisfy my cravings for midday and evening snacking.

Ingredients:

  • Instructions:

  • Preheat oven to 350 degrees F (175 degrees C).

  • Mix almond flour, chopped walnuts, and coconut flour together in a bowl.

  • Beat the egg in a large bowl. Beat almond butter, honey, coconut oil, and vanilla extract into the egg until the dough is smooth.

  • Chop your chocolate gems to create small/medium chunks and mix them into the dough until just combined.

  • Scoop the dough into chestnut-sized balls and place 1-inch apart onto ungreased baking sheets lined with parchment paper.

  • Bake in the preheated oven until set, about 10 minutes.

  • Let cool for 3-5 minutes before enjoying
