Grain Free - Keto Friendly Baked Crackers

These crackers made with almond flour, walnuts, and flaxseed are paleo, gluten-free, and keto-friendly!

These baked crackers are the perfect vehicle for chicken salad, tuna salad, smoked salmon, or anything your tastebuds desire! I love making a batch of these and having them as a healthy snack option to graze on all week long.

Ingredients:

  • 1 cup almond flour

  • 2 tablespoons finely chopped walnuts

  • 1 ½ teaspoons flax seed meal

  • ½ teaspoon salt

  • 2 tablespoons water

  • 1 ½ teaspoons olive oil

  • 1 tablespoon dried rosemary (optional)

  • Instructions:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.

  • Mix almond flour, walnuts, flax seed meal, salt, and rosemary in a bowl until well combined. Add water and olive oil; mix until the dough is moist and holds together.

  • Turn the dough onto the prepared baking sheet. Place a second piece of parchment over the dough and use a rolling pin to roll it into a 1/16-inch-thick rectangle. You can cut the edges to make a perfect rectangle or leave it rustic.

  • Cut dough into 1-inch squares using a pizza cutter, keeping the dough still attached.

  • Bake in the preheated oven until the outside edges of the dough are browned, about 15 minutes. Cool crackers on the baking sheet, then break into squares.
