Blueberry Apple Bake

Baked Honeycrisp apple, blueberries, and spices make a delicious dessert that tastes like pie filling.

This sweet treat is vegan, gluten-free, paleo, and Whole 30 friendly.

I love this nutritious, guilt-free dessert! I have such a sweet tooth so I need a dessert every day. This is perfect because I know I’m giving my body some nutrients while treating myself.

Ingredients:

Apple berry bake with an almond flour tortilla “crust”

  • 1 cup fresh or frozen blueberries (wash the fresh berries before baking)

  • 1 large Honeycrisp apple, diced

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • 2 tablespoons melted ghee, butter, or coconut oil

    Instructions:

  • Preheat oven to 425 degrees F (220 degrees C).

  • Line a baking pan with parchment paper (8x8 or larger)

  • Place diced apples and blueberries in the pan and spread them out in one layer. Sprinkle cinnamon and nutmeg over the apple mixture; add melted butter, ghee, or coconut oil.

  • Stir this mixture a few times to make sure everything is incorporated. Flatten everything back to one layer before baking.

  • Bake in a preheated oven until apples are completely softened, for about 20 minutes.

  • Take the mixture out of the oven and let it cool for a few minutes before eating.

Want to add something a little more to your dessert? You can use an almond flour tortilla as a little “pie crust” or you can add any fro-yo or icecream of your choice to the top of your berries and apples.
