Indulgent Chocolate Zucchini Bread

A moist, chocolatey bread that is gluten-free & free of refined sugar.

Zucchini bread is deliciously moist and sweet but not too sweet. This recipe is the perfect indulgence for chocolate lovers!

Ingredients:

  • 1.5 cups gluten-free all-purpose flour

  • 3 tablespoons unsweetened cocoa powder

  • ½ tablespoon ground cinnamon

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 1 cup coconut sugar

  • 1 large egg

  • ½ cup olive oil

  • 1 teaspoon vanilla extract

  • 1 cup shredded zucchini (about 1 medium zucchini)

  • ½ cup chopped walnuts

  • 3/4 cup semisweet chocolate chips

    Instructions:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.

  • Combine flour, cocoa, cinnamon, baking soda, baking powder, and salt in a large bowl; mix well. Combine sugar and eggs in a separate bowl; beat until well blended. Add oil and vanilla; beat until combined. Stir in zucchini. Add flour mixture; stir just until moistened. Stir in nuts and chocolate chips. Spoon your mixture into the prepared loaf pan.

  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 55 to 60 minutes. Cool bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
